Oka Hijiki, also known as Saltwort, is a cool-season succulent annual that grows about 12" tall and wide with low water needs. Its crisp, mildly flavored stems are delicious fresh or in salads and can be cooked to reduce oxalic acid. Nutrient-rich, it’s packed with vitamins A, C, and K, plus calcium, magnesium, and potassium—making it both a tasty and low-maintenance addition to any garden.
